taku
Elegance and innovation shape the culinary artistry of taku at the Excelsior Hotel Ernst, just a stone's throw from Cologne Cathedral. Michelin-starred chef Mirko Gaul combines the diverse flavors of East Asia with techniques from Western haute cuisine, creating imaginative dishes that surprise and captivate. Here, delicate fine dining meets an experimental culinary spirit that transcends traditional boundaries.
At taku, every detail is celebrated: whether through the meticulous selection of top-quality regional and international ingredients or the presentation of the dishes, which often appear as miniature works of art. Complex flavor compositions unite spice, sweetness, and acidity, unfolding with each bite – a sensory experience like no other.
Mirko Gaul's journeys across Asia – from Bangkok to Tokyo – influence his cuisine as much as his Cologne roots. Creations such as tuna tataki with herb dashi or Wipperfürth Wagyu beef with ponzu combine global sophistication with regional responsibility. Paired with carefully curated wines, taku offers enjoyment at the highest level.
