A restored 19th century brewery provides the setting for a gastronomic concept that renegotiates culinary memories. At Alteburgerstraße 299, a different grandmother cooks her personal favorite dish every evening - interpreted by a professional chef who takes her handwritten notes just as seriously as the stories she shares with visitors afterwards.

Concept between craftsmanship and storytelling culture

The absence of a menu has a deliberately decelerating effect: one dish, precisely coordinated, served at a large communal table. This reduction opens up space for dialog, for biographical notes from the grannies and for an understanding of eating as a cultural practice. The core team of Axel Brinkmann, Uwe Schlindwein, Andrea Cordes and Simon Kühner see the project as a response to a gastronomy that is often geared towards efficiency. The months-long renovation of the historic premises combines tradition and the present without nostalgic exaggeration.

Sustainable structures

All seats are reserved in advance, which means that the required quantity can be calculated exactly. There is no leftover food. Drinks are available for self-service - a pragmatic system that underlines the communal concept.
